The cuisine of Savignano Irpino draws its inspiration from its geographical location: a border region between Irpinia and Puglia, where the robust flavours of the mountains meet the simplicity of garden produce.

It is a cuisine that reflects the character of its people: humble, hard-working and deeply connected to the land. Every dish embodies time-honoured values – hard work, sharing and seasonality – and is created using wholesome ingredients that the local area generously provides.

Country cooking: energy and substance

Savignano’s culinary tradition has its roots in its agricultural heritage. It is a simple yet flavourful and hearty cuisine, designed to sustain workers in the fields.

Food marked the passing of the days:

  • Breakfast, between 9.00 and 10.00, with an omelette, fried peppers and bread.
  • The ‘ammren’, the 3.00 pm lunch, consisting of ham, sausage, cheese, bread, water and wine.
  • In the evening, a hot meal: pizzell’ e patan’, maccarun’ e minest’, beans with pork rind, pan’ cuott’ cu lj vruochl’, and pupiciell’ affort’.

Each dish was created out of a desire to provide energy and comfort after a day’s work, transforming simple ingredients into memorable flavours.

Local specialities

At the heart of Savignano’s culinary tradition lie local produce that reflect the richness of the region.

Ravece oil

A rare and prized variety, with an intense fruity flavour, herbaceous and almond-like undertones, and pronounced bitter and spicy notes. A distinctive oil that enhances any dish.

Wheat

Every dish tells the story of a borderland that has managed to transform simplicity and hard work into flavour, identity and community.

Wine

Sangiovese, Merlot, Coda di Volpe and ‘fragola’ grapes have always accompanied meals in Savignano, reflecting the agricultural character of the area.

Handmade pasta: a tradition passed down through the generations

The abundance of wheat has made bread and pasta the undisputed stars of the table. Even today, housewives still knead the dough by hand, repeating the techniques passed down from mother to daughter.

These traditional formats reflect a living tradition:

  • Vricchitell’ (orecchiette)
  • Cicatiell’ (cicatelli)
  • Pizzell’ (maltagliati)
  • Laganiell’ (lagane)
  • Ravaiuol’ (ravioli)

The dishes are rounded off with produce from the vegetable garden: chicory, cardoncelli mushrooms, green beans, escarole, pulses, peppers and potatoes.

Among the most popular dishes:
Vricchitell’ with chicken stock, laganiell’ with beans, baked bread with vruochl’, right through to the traditional ‘Savignano-style breakfast’.

The pig-slaughtering ritual and communal dining

The slaughter of the pig was a key moment in rural life. It was not merely about food production, but a communal event, an occasion for people to come together and show solidarity.

Among the signature dishes is ‘minest’ cu lj recchie di puorch’, an example of a cuisine that wasted nothing and turned every part into food.

The taste of the festive season

Religious festivals also shape what we eat.

At Christmas, people prepare ‘lu gallucc’ and ‘le cim’ cu lu baccalà’, whilst the desserts reflect Apulian influences, with crespelle (cartellate) and zeppole.

At Easter, we have cardoon stew, pizza with ricotta, taralli and biscuits.

On All Saints’ Day, there’s no shortage of ‘lj cicc’ cuott’, cooked wheat which, whilst drawing on the Apulian tradition, has taken on a identity of its own here.
